175 g carrots, 1 stick unsalted butter, melted, 125 ml milk, 2 eggs, grated, 200 g caster sugar 300 g flour, finely grated zest and juice of ½ orange, 1tsp baking powder, 1tsp mixed spice, 100 g white chocolate chips, 100 g raisins
- Preheat the oven to 180C (350F) and place paper cases in a muffin baking pan.
- Grate carrots into a large bowl, add all the remaining ingredients and beat well with a wooden spoon until just mixed - don't over-mix or the muffins will be tough.
- Spoon mixture into paper cases. They will be almost full. Bake for about 25 minutes until just firm.
- Decorate by using orange and green fondant or gum paste. Make the small carrots and add some icing under them to attach them to the muffins. You can use some white chocolate too.
