Simple but scrumptious: Buttermilk muffins

Ingredients:

300 g all-purposed flour, 100 g sugar, 2 teaspoons baking powder, 1 teaspoon bicarbonate of soda, 1/2 teaspoon salt, 1/2 teaspoon ground nutmeg, 50 g butter, melted, 1 egg, lightly beaten, 270 ml buttermilk, 1 teaspoon vanilla extract

Instructions:

1. Preheat the oven to 180 C and grease 12 muffins cups or line with paper cases.
2. Mix dry ingredients - flour, sugar, baking powder, bicarb, salt and nutmeg.
3. Whisk melted butter, egg, buttermilk and vanilla.
4. Pour buttermilk mixture into dry ingredients and stir until just combined. Scoop mixture into prepared cases, filling almost to the top.
5. Bake until golden - about 18 minutes.

TIP: You can add fruits in the dough – blueberries, raspberries blackberries suit well this recipe.
