Ingredients:

100 g caster sugar, 50 g coconut, 125 g self raising flour (1 cup), 100 g butter, 1 large egg yolk, beaten

Instructions:

  1. Preheat oven to 180-200 C (350F).
  2. Mix stiffed flour, sugar and coconut in a big bowl.
  3. Add melted butter and egg yolk and mix The dough should be firm.
  4. Roll teaspoonsfull of mixture into balls, place on greased baking tray and flatten with fork. Leave space between biscuits and bake 10-15 mins or until brown.
