- Classic Buttercream frosting:
Ingredients: 4 cups of powdered sugar, 2 sticks of softened butter, 2-3 teaspoons of vanilla, 1-2 tablespoons of milk
Whisk the ingredients in the following order: butter, sugar, vanilla, milk. Whisk until pale and smooth. Then frost yourself!
- Chocolate Cream Cheese Frosting:
Ingredients: 8 ounces cream cheese, room temperature, 1/4 cup unsalted butter, room temperature, 3 cups sifted powdered sugar (You can decrease this amount if you don't care about it being as stiff for piping), 1/2 cup cocoa powder
Mix cream cheese and butter until smooth and creamy. Mix in powdered sugar, one cup at a time. Mix in cocoa powder. Then frost yourself!
- Marshmallow Frosting
Ingredients: 8 large egg whites, 2 cups sugar, 1/2 teaspoon cream of tartar, 2 teaspoons pure vanilla extract
Place egg whites, sugar, and cream of tartar in the heatproof bowl of an electric mixer. Set over a saucepan with simmering water. Whisk constantly until sugar is dissolved and whites are warm to the touch, 3 to 4 minutes. Transfer bowl to electric mixer fitted with the whisk attachment, and beat, starting on low speed, gradually increasing to high, until stiff, glossy peaks form, 5 to 7 minutes. Add vanilla, and mix until combined. Use immediately.
- Strawberry Cream
Ingredients: 1 cup freeze-dried strawberries, 1 cup unsalted butter, softened to room temperature, 4 cups confectioners' sugar, 3 Tablespoons heavy cream, 1 teaspoon vanilla extract, salt, to taste
Using a blender or food processor, process the freeze-dried strawberries into a powdery crumb. You should have around 1/2 cup. Set aside. In a large bowl using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter on medium-high speed until creamy, about 2 minutes. Add confectioners' sugar, strawberry powder, cream, and vanilla. Beat on low speed for 30 seconds, then switch to high speed and beat for 2 minutes. Taste. Add a pinch of salt if frosting is too sweet. Then chill and frost yourself!
- Peanut Butter Frosting:
1/2 cup butter, softened 1 cup creamy peanut butter 3 tablespoons milk, or as needed 2 cups confectioners' sugar
Place the butter and peanut butter into a medium bowl, and beat with an electric mixer. Gradually mix in the sugar, and when it starts to get thick, incorporate milk one tablespoon at a time until all of the sugar is mixed in and the frosting is thick and spreadable. Beat for at least 3 minutes for it to get good and fluffy. Then frost yourself!
